Cacao and Coconut Balls

So I’m going through a phase at the moment. I’ve not been too well, and I’m overhauling my diet. I’m trying to stick to a plant based diet as much as possible, which sounds easy apart from sorting out the sweet cravings. I’ve seen so many blog posts on ‘energy balls’ so I attempted my own version . I think they taste amazing, you only need one to satisfy a sweet craving and they are so simple to make…

100g almonds

100g desiccated coconut

400g raisins or dates

4tbsp  raw cacao powder

2tbsp coconut oil

2tbsp water

Easy! Put all of the ingredients into a food processor and blend until you have a thick mixture. If the mixture seems dry and a bit flakey, add a little bit more water until the mixture is combined fully.

Take a teaspoon of mixture and roll it into a ball. Don’t worry if the mixture seems wet, they will be fine once they cool. The balls should be able to hold their shape- Put them in the fridge for a couple of hours to ‘harden up’.

This amount of mixture should make between 16-20 balls and they will last for a week or so in the fridge.
