Raw Vegan Flapjack

So I have had one of those week’s, you know the one….when all you want is chocolate or biscuits or cake. I decided I would try something different, mainly because I already had the ingredients and I didn’t really wan’t to wait for anything sweet.



1 banana

1 handful of dates

1tbs agave syrup or honey

1tbs coconut oil

125g oats

100g cranberries

25g each of seeds – I used sunflower, sesame and poppy seeds

75g walnuts


In a blender, put the honey, coconut oil, banana, dates along with 2 tbs of water. Blend these ingredients until you have a fruity mush!12781994_10153481856503367_1780465098_n

Then in a bowl, mix all of the dry ingredients.Once you have a fruit mush, add it to the bowl and mix well. At the same time, line a shallow tray with a baking paper. Put the combined mixture into the tray and press the mixture down firmly – try and keep the flapjack as level as possible.



Leave to chill in the fridge for 2-3 hours…or as long as you can wait. Then cut it into 10 pieces…then when the 3 o’clock sugar crave kicks in, grab one…or two.
